Sauce made with garlic, spices and olive oil, accompanying our fish soups fish soups (see recipe) and our famous bouillabaisse (see recipe).


  • 2 egg yolks
  • 50 cl olive oil
  • 3 cloves of garlic
  • paprika
  • safran
  • cayenne pepper


Crush the garlic finely, then add the egg yolks, a pinch of saffron, paprika, salt and cayenne pepper. Add the oil in a thin stream while stirring as for a mayonnaise. Relax with a tablespoon of slightly reduced fish soup.
